Saint Patrick’s Day is a fun tradition that is mostly not relevant in my world, other than an excuse to eat yummy food and color things green. I remember as a child – we used to dye everything green with some very-not-healthy green food coloring. Green oatmeal, green everything. Yuck! (It didn’t even look good!)
At some point I remember certain restaurants coming out with shakes that were colored green and flavored of peppermint. Sounds like fun! But I am much more careful about my diet now. I avoid food coloring as much as I can.
And – who needs green food coloring when you have spinach? For reals.
Spinach is super mild and you will never know it is there. I would say – adults with seasoned taste buds can add more spinach to up nutrient density. For children, feel free to add less. It will still color it quite well.
This peppermint shake is a favorite. So easy and fast.

- 1 speckled banana
- 1 frozen speckled banana in chunks
- 1/4 avocado
- 1 cup fresh spinach
- 2 dates
- 1/2 to 1 cup water or coconut milk
- 1 drop food grade peppermint oil
- Add all ingredients to a blender.
- Blend until well combined.
- Add some cocoa nibs or chocolate chips as garnish, if you wish!
