Carrot Mango Glory!

If you have never tried the combination of carrots, mango, lemon and mint, you are in for a treat!!

Here is the most refreshing, tastes like dessert but healthy, carrot dish you have ever tasted.  I highly recommend keeping this salad on hand if you are having sugar cravings.  It just satisfies the sweet, tangy, crunchy need that most of us have.

So easy, so simple!  Enjoy!

It is much easier to make with a food processor – but if you need to just chop it all, or grate it with a box grater – great!

Use a high quality, food grade lemon oil – or you can just zest the lemon first, if you wish. 🙂

Carrot Mango Mint Salad

Ingredients

  • 6 carrots
  • 1 champagne mango
  • juice of 1 lemon
  • a handful of fresh mint, chopped
  • 2 drops food grade lemon essential oil
  • pinch of salt

Instructions

  1. Grate the carrots and mango in a food processor (or by hand).
  2. Place in a bowl with the remaining ingredients.
  3. Stir, chill and enjoy!
